  • 4 Wholey® All Natural Tilapia Loins thawed if necessary, coarsely chopped
  • 1 Large egg
  • 2 Tbsp Mayonnaise
  • Tbsp Old Bay® seasoning
  • 1 Tbsp Fresh lemon juice
  • ¼ cup Red bell pepper finely chopped
  • 3 Tbsp Green onion thinly sliced, plus additional for garnish
  • ½ cup Parmesan cheese
  • ¼ cup Panko breadcrumbs
  • 2 Tbsp Panko breadcrumbs
  • 3 Tbsp Capers drained
  • ¼ tsp Salt
  • ¼ tsp Black pepper
  • 2 Tbsp Olive oil
  • Lemon wedges for garnish (optional)


  • Pat tilapia dry with paper towel. In food processor, pulse tilapia, egg, mayonnaise, seasoning and lemon juice until some coarse pieces remain, scraping down bowl occasionally; transfer to large bowl. Fold in bell pepper, onions, ¼ cup each cheese and breadcrumbs, capers, salt and black pepper; form into 4 (¾-inch-thick) cakes.
  • In wide, shallow dish, stir remaining ¼ cup cheese and 2 tablespoons breadcrumbs. Working with 1 cake at a time, press 1 side of cake into cheese mixture, shaking off excess; repeat with other side and place on large plate.
  • In large skillet, heat oil over medium heat. Add cakes; cook 8 minutes or until golden brown and internal temperature reaches 145°, turning once. Makes 4 cakes.
  • Serves cakes garnished with onions and lemon wedges, if desired.
