Air Fryer Walleye Sandwich
- ½ cup All-purpose flour
- 1 tsp Garlic powder
- 1 tsp Kosher salt
- 1 tsp Onion powder
- 1 tsp Paprika
- 2 Large eggs
- 2 Wholey® Walleye Fillets (thawed if necessary, cut crosswise in half)
- Nonstick cooking spray
- 1½ cups Coleslaw mix
- ¼ tsp Celery salt
- 4 Brioche hamburger buns
- ⅓ cup Hamburger dill pickle chips

Preheat 3-quart air fryer to 400° for 5 minutes. In wide, shallow dish, whisk flour, garlic powder, salt, onion powder and paprika. In separate wide, shallow dish, whisk eggs; place breadcrumbs in third wide, shallow dish. Dredge walleye in flour mixture, shaking off excess, then dip in eggs, allowing excess to drip off, then in breadcrumb mixture to coat; place on rimmed baking pan and spray both sides with cooking spray.

Spray air fryer basket with cooking spray. In 2 batches, add walleye and air fry 10 minutes or until golden brown and internal temperature reaches 145°, turning once.

In medium bowl, toss coleslaw mix, mayonnaise, lemon juice and celery salt. Makes about 1 cup.

Serve walleye in buns topped with pickles and coleslaw mixture.
