Serves 4

  • 1 bag Wholey Mussels
  • 3 tbsp Butter or Margarine
  • 1 clove Garlic, minced or pressed
  • 1 cup dry White Wine or ¼ cup regular strength chicken broth
  • 1 small Onion, chopped
  • 1/3 cup lightly packed minced Parsley
  • ¼ cup Celery, sliced Red Pepper, chopped
  • 1/8 tsp Pepper
  • Melted Butter

In a large kettle (about 4 qt. size or large), melt the 3 tablespoons butter over medium heat. Add onion and garlic and cook, stirring occasionally, until soft. Add wine, celery, red pepper, parsley, and pepper; bring mixture to a boil. Add mussels, cover, simmer gently until mussels have opened (about 5 to 8 minutes) – discard any that do not open.

With a slotted spoon, transfer mussels to individual serving bowls; pour cooking liquid evenly over serving. Accompany with small individual dishes of melted butter for dipping mussels.
